Brown Sugar Candied Carrots

One of my favorite vegetables makes a yummy side dish that will compliment your main course. I also make these during the holidays to contrast all the casseroles overloaded with calories. The brown sugar adds a slight touch sweetness to these candied carrots that keeps my kids asking for more.


  • 1 pound Carrots
  • 2 Tbls Butter
  • 1/4c Packed Brown Sugar
  • Salt & Pepper


  1. Cut carrots into 2 inch pieces and place in a pot of salted boiling water. Reduce heat to medium and cook for 25-30 mins. or until tender, not mushy.
  2. Drain carrots and return to pot on low heat. Stir in butter, brown sugar, pinch of salt & pepper.
  3. Cook for about 3-5 mins, until sugar is bubbly.
