Lunch on the weekends tend to be very casual and thrown together. This Saturday was no different so I searched through the pantry and was inspired to make a kid friendly quesadilla. They are so easy and quick to make. I used a can of pinto beans, tortillas and some Mexican blend cheese. Topped them off with salsa, sour cream and some pre made guacamole. It took a total of 10 mins to make and The kids loved them!

Kid Friendly Quesadillas
Ingredients
- 8 small tortillas
- 1can pinto beans
- 2 cups Mexican blend shredded cheese
- Optional sides:
- Tortilla Chips
- Salsa
- Sour cream
- Guacamole
Directions
- Rinse can of pinto beans and drain completely. Put 1/2 the can in a bowl and smash most of the beans into a paste leaving some beans whole.
- Spread about 2Tbs onto a tortilla and top with 1/2c of cheese. Place 2nd tortilla on top.
- Microwave for 1 min. Repeat steps as needed.
